Some Recipes

I’ve been having fun cooking lately. I feel like I go through stages. Sometimes it seems like an impossibility to get inspired and then other times I want to cook everything!
I’m totally in the “cook everything” stage. It might have something to do with being pregnant and wanting to eat everything??
So, I thought I would share some recipes with you.
For those of you with an iPhone, check out the Whole Foods App. It’s got tons of great recipes and you can even search for a recipe with whatever you have on hand.

One of their recipes that I tried and love is the “Dutch Oven Pancake”. It tastes kind of like french toast. Now I have to be honest when I read the name I thought “really?!?!”
Growing up with an older brother a “dutch oven” has a whole different meaning. Needless to say it scarred me many times for life!

It’s such an easy recipe that I totally had the girls make it with me.
I’m sure you could also get adventurous with this and add fruit (blueberries or pears) or chocolate chips…
Anyway, here it is:

Dutch/German Pancakes:

Ingredients:
2 TBLSP unsalted butter
4 eggs
1/2 cup unbleached all-purpose flour
1/2 cup whole milk

Optional Toppings:
Lemon Juice
Powdered sugar
Maple Syrup
Cinnamon

Method:
Preheat oven to 425*F.
Melt butter over low heat in a 10- or 11- inch cast iron skillet. (I just used a regular stainless steel one)
Whisk eggs in a medium bowl. Whisk in flour and milk until mixture is no longer lumpy.
Pour the batter into the skillet over the melted butter.
Bake for 25 minutes until pancake is puffed and golden brown.

Remove from the oven, transfer onto a plate and cut into wedges.
Sprinkle whichever toppings you choose and serve!

Today the girls and I are going to write letters to our 5 Compassion kids.

I send them letters online sometimes, but I love the letters they hand write to us and it's always more personal too.

We're also sticking some band aids in there - just for fun. :)

Apple Cider Recipe

1/2 cup brown sugar

2 quarts Apple Juice

**1 tsp All Spice

**1 1/2 tsp cloves

2 cinnamon sticks

A few orange slices

**Put the All Spice and Cloves in a tea strainer.

2 hrs on low and remove spices and oranges or else the flavor gets too strong...

SOOOO yummy and one of our favorite family traditions!

I'm thinking of planning a Christmas "thing" for every week. We'll probably end up doing much more than that tho! :)

Europe!

Hey Everyone
We're heading over to the UK tonight for a few days before the European shows start.
Please pray for safe travels and for all of us to adjust to the time zones that we're in (especially the girls)!
Also for good health and for the people's hearts to be open to the Lord and for them to be strengthened and encouraged.
I'm SOOOO excited. The girls and I are only going for a little portion and mainly to see my brother over there.
Anyway.
We'll try keep the blogs coming and hopefully we'll be posting lots of pics and stuff too!

Hi

We made it over safely.
So far we've been having so much fun.
Jeremy and I watched a Peter Pan show last night (one of my fav's!).
It was great - amazing acting!
Today we've walked TONS and made good use of the Underground!!! The girls did so well today - total little champs. :)
We went on the London eye, shopped in Soho, went to Buckingham Palace, saw Big Ben and the houses of Parliament and St Margeret church at Westminster Abbey. I think that was all. :)
I'll post some pics soon - the internet is too slow here and it's taking forever to load.

The sweetest thing just happened...
Bella has been trying to do some "jobs" around the house (cleaning her room, unpacking the dishwasher with me, pulling weeds etc) because she wants me to give her money for it.
It started with her getting a little plastic Hello Kitty piggy bank and she quite enjoys putting coins in it.

Today at nap time she had cleaned up her room and asked me to give her some money and so I said, "Well babes sometimes we have to do things to look after our things and not just to get money."
Then she told me that she actually wants to work and work and get lots of money because she wants to buy all the kids that don't have anything, toys.
She told me she wants to give her bears away and some blankets too, so they can have good sleep at night.
She told me I need to give some of my food away and our cereal too, so they can have lots of cereal.
Then we prayed together for nap time and she prayed that God would love them.
I'm so stoked, my heart is so touched! I've often prayed that the Lord will give my girls' a heart for other people and it's so sweet to see it unfold.
Watch this space tho! My mind is going crazy of all the little things we could do. I know there are so many people and children especially that are in need and if Bella (or Ari) have a heart for it, you can be sure I'm going to encourage it with all of mine!
As any mom would ask, please pray for wisdom as we raise these precious gifts the Lord has entrusted to us!
I'm so thankful for God's Spirit that prompts us and teaches us.
Hope you have a wonderful weekend and no matter how much your mamma may have blown it, make sure you give her some love on Mothers Day. :)

It is time to seek the Lord

I've been reading in 1 Chronicles lately. It's been so awesome - really speaking to me a lot.
A few days ago I read Chap 14.
(Read it if you have a sec)
It's such a great chapter.
It's speaking about when David becomes king. The Philistines hear that he is king and so they plan an attack against him.
I love that David's first response is to inquire of the Lord. He asks the Lord if he goes against the Philistines, will the Lord deliver them into his hands?
God says yes and so he goes.
A second time, the Philistines come against him and once again, David's first response is to inquire of the Lord.
This time the Lord says no and gives him different instructions for the victory. David hears and obeys, wins the battle and God gives him favor around the nations.

When I finished reading this, it made me think about how many times we move forward without our first response being to seek the Lord. I think sometimes we even have the cheek to move forward and then blame Him for our failures! :(
But it's a challenge to me to seek the Lord at every turn and wait for His voice and then whole-heartedly walk in obedience to Him.
